Spinach is a leafy green vegetable that is grown from seed. Choose spinach leaves that are green and appear crisp. Spinach should be thoroughly washed before using. Serve spinach in a salad or add it to sandwiches, omelets, smoothies, and stir-fries.

Fun fact: Spinach is a very hardy crop and can withstand temperatures as low as 25°F; however, it does not tolerate hot weather well.
