When is Rhubarb in Season?
- Spring
Rhubarb stalks are found in a variety of colors – from light green to a dark red. Rhubarb has a tart flavor. Choose stalks that are not limp or curled. Add rhubarb to a sauce, compote, jam, crumble, or crisp.
Fun fact: Rhubarb needs cold temperatures to produce stalks and only grows when the temperature is less than 75 degrees Fahrenheit.
Note: Only the stalks of the rhubarb plant can be safely eaten. Rhubarb leaves (cooked or raw) contain toxins that are poisonous.
