Fantastic French Toast
Enjoy this classic breakfast recipe with fresh or canned fruit.
Makes 6 servings.
Ingredients
- 2 large eggs
- 1/2 cup non-fat milk
- 1/2 teaspoon vanilla extract
- 6 slices whole wheat bread
- syrup or other toppings (optional)
Directions
- Wash hands with soap and water.
- Preheat the griddle over medium heat, or set an electric frying pan at 375 degrees.
- Put eggs, milk, and vanilla in a pie pan or shallow bowl and beat with a fork until well mixed.
- Grease the griddle or pan with a thin layer of oil or use nonstick spray.
- Dip both sides of bread, one slice at a time, in the egg mixture and cook on the hot griddle or frying pan.
- Cook on one side until golden brown. Turn the bread over to cook the other side. It will take about 4 minutes on each side.
- Optional: serve with syrup, applesauce, fruit slices, or jam.

Crunchy Berry Parfait
So quick, so easy, and so delicious! This parfait is a favorite among kids and adults alike. Use soy yogurt instead of regular yogurt for those who can't have dairy.
Makes 1 serving.
Ingredients
- 1/2 cup yogurt, non-fat vanilla
1 cup blueberries or strawberries (fresh or frozen thawed)
1/2 cup low-fat granola (or crunchy cereal)
Directions

- Spoon yogurt into glass, then top with fruit and granola.

Spinach and Meat Cakes
Enjoy these spinach and meat cakes over brown rice, and with a side of roasted sweet potatoes.
Makes 6 servings.
Ingredients
- 1 pound ground beef, or turkey, 7% fat (93% lean)
- 16 ounces frozen spinach chopped (may substitute a 2 bunches of fresh spinach)
- 1/2 onion (small, finely chopped)
- 2 garlic clove (minced)
- 1/2 teaspoon salt
- black pepper (to taste)
- 3 cups brown rice
Directions
- Wash hands with soap and water.
- Preheat frying pan (no oil).
- Combine all ingredients except brown rice in a large mixing bowl. Mix well.
- Form mixture into 12 small balls. Place in frying pan and flatten into patties using a spatula.
- Cook over medium heat until cooked on both sides.
- Serve over brown rice.

Sure to Please Baked Eggs & Cheese
Add your favorite veggies to dress up this cheese and egg dish, or serve with fresh salsa.
Makes 4 servings.
Ingredients
- 1 tablespoon oil
- 6 eggs
- 1/2 cup non-fat milk
- 1/2 cup low-fat cheese (grated)
- 1 teaspoon garlic powder
- 1 1/2 teaspoons oregano
Directions
- Wash hands with soap and water.
- Preheat oven to 350 degrees.
- Put oil in a medium baking dish or small cake pan and heat in the oven for a few minutes.
- In a bowl, beat eggs. Mix in remaining ingredients. Pour into hot pan.
- Bake 20 minutes or until eggs are firm. Serve immediately.
