    Elena is one person who joined a direct opportunity through SNAP-Ed. Elena is a mom of 4 boys and she had some health concerns in her family, so she jumped at the opportunity to learn about healthy eating on a budget. She was concerned about the amounts of fat, sugar and salt her family was consuming. She wanted to learn healthier alternatives for how to cook for her family rather than how she grew up.

    The goal is to demonstrate how to grow vegetables and herbs with the hope of inspiring people to grow their own food. This project started with 12 planters and added 4 more in 2016. Each planter has an accompanying educational description and suggested culinary use for its contents.

    Through the Husky Nutrition Programs’ Farmers Market Education initiative, Registered Dietitians and UConn students promote the value of fresh produce. This is done by providing farmers market information and free nutrition education to Connecticut residents.
