Nine 45-minute lessons that cover important nutrition topics for seniors. They can be taught individually or as a series. Each lesson includes all the information you need—lesson plans, Power Point slides, handouts, evaluation tools, and references. The educational matrix in the appendix shows how each lesson’s objectives conform with the Dietary Guidelines. Most have recipes to make and taste-test. Many have an educational game format to make it fun and interesting. Nurses, staff from aging services, or volunteers can be trained to use these lessons.Lesson topics include: Great Grain Discoveries, All Star Senior Snacks, Hearth Healthy Meals for 1 or 2, Cooking and Seasoning with Herbs, Savory Soups, Fitness Fun, Evaluating Dietary Supplements for Seniors, Dietary Fat - Fact or Fiction?, New Concepts in Weight Control - Energy Density.

Evaluation Information

ST1, MT1, LT1, ST3, MT3, LT3 Evaluations are post retrospective, with 3-6 month follow-up surveys. We have used pilot research using matched post and follow-up surveys and t-tests, participants significantly improved on diet and physical activity knowledge, intent to change and change behaviors.
